Baking – maple-sweetened bran muffins

Honestly I love bran muffins???? They’re just so tasty and yummy and easy to make and healthy. I’ve been making them once a week for the past couple months and taking them for snacks during the day and they’re the best! They’re sweetened with maple syrup, which goes so well with the chocolate, and use whole wheat flour and flax seeds so they’re fairly healthy!

Ingredients

  • 1 & 1/2 cups bran flakes
  • 1 & 1/3 cups whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 (ish) cup chocolate chips
  • 1/4 cup ground flax seeds (try to use ground flax seeds – they’re easier for your body to digest and get all the good things out of. If you don’t have ground ones, pulse them in a spice/coffee grinder for a minute ish! And if you don’t have flax seeds, just add slightly more bran, or sub oatmeal instead)
  • 1/2 cup maple syrup
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 cup olive oil
  • 1 cup milk

Directions

Preheat the oven to 375*F. Mix your dry ingredients together in one bowl, and your wet ingredients together in another. Chocolate goes with the dry ingredients. Stir the two mixtures together until things are nicely blended, but try not to over mix them!! Spoon into a muffin tin and top with oats (if you’re feeling fancy). Bake for 15-20 minutes.

To make vegan: use nut milk and substitute either more oil (1/4 cup ish) or applesauce (about 3 tablespoons) for the egg. And use dairy-free chocolate!

They’re really good as soon as they come out of the oven when the chocolate is still all melty, but they also last fairly well in an air-tight bag or container.
